Crunchy granola

 

If you know me, then you know that my favorite addition to my breakfast bowl is granola. I used to buy it in the store, however even though it was tasty, it was also full of processed sugar and I really wanted to stop my sugar cravings.

So I've decided to search for a recipe that would make me wanna make my own. After a while, I've come across a book "Eat better not less" by Nadia Damaso and after I tried her crunchy granola recipe, I knew I don't have to search more :) Honestly, this granola is perfect. You can also adapt it to your own needs, omit ingredients you do not have, add ones you do. The final result will be crunchy, sweet granola that will make your house smell heavenly. That's why it's been a year and I still make it every week :) So here is how I do it:

You will need:

150 gr oats - I use rice flakes, buckwheat flakes and oats. If you wanna make it gluten free, omit the oats.
50 gr pumpkin seeds
40 gr sunflower seeds
20 gr hemp hearts
1 tsp cinnamon
a pinch of salt
10 gr maple syrup
20 gr nut butter sugar free (I use almond butter mostly)
20 gr coconut oil (melted)
1 ripe banana
40 gr finely chopped walnuts/almonds
some pure vanilla extract

Instructions:

1. Preheat oven to 160 degrees Celsius. On a baking tray spread out a parchment paper.

2. Mash a banana with a fork. Mix the oats and hemp hearts, and add the rest of the ingredients. Stir well and spread out on a baking tray.

3. Bake in the oven for 25-30 min. Every ten minutes, take the tray out and stir up the granola with a spoon so that it bakes evenly. When granola gets brown and crunchy (after 25-30 min) take it out of the oven and let it cool.

4. Store in airtight container on a room temperature. It can last 2 weeks without problem. But, trust me, you will eat it in 1 week :)
